1/2 cup smooth peanut butter or peanut butter substitute
1/4 cup milk
1/4 cup cocoa
2 cups old-fashioned (large flake) oats
1/4 cup dried fruit, coconut or other additions (optional)
In a medium saucepan, bring the sugar, peanut butter, milk and cocoa to a simmer - it will be thick, but stir it until it’s melted and bubbling around the edges. Remove from the heat and stir in the oats, salt and any other ingredients you want to add.
Drop by the spoonful onto a parchment-lined baking sheet and let sit at room temperature or refrigerate until firm.
