3/4 pound of ground beef
1/2 can your favorite spaghetti sauce
2 cloves of garlic
1 small onion
10 ounces shredded mozzarella cheese
1 tablespoon oregano
1 teaspoon sea salt
1 teaspoon pepper
Preheat the oven to 400 degrees.
Slice the eggplants about 1/3 to 1/2 inches thick. Coat with olive oil and bake in oven for about 20 minutes or until they turn a little in color.
Fry the finely chopped garlic and onion in olive oil until soft.
Add meat and fry. Add tomato sauce and seasoning. Let simmer for 10 minutes or more.
Remove the eggplant slices from the oven and spread the meat mixture on top and sprinkle with cheese and oregano. Place in the oven for about 10 minutes or until the cheese has melted.
